Coffee has always been a topic of conversation in our home. Anytime we travelled to new places we would always seek out the nearest specialty coffee seller. There’s nothing quite like getting your hands on that hand-crafted package and squeezing out the unique aromas that only a freshly roasted coffee can give. Although we now know that the little holes in the bag actually serve to let out the carbon dioxide from the beans… and we thought it was to seduce you into buying some! After trying our hand at home roasting, we wanted to hone in on our skills so we embarked on a professional coffee roasting course. From then on we were hooked, so it felt like a natural progression for us to start this new business venture. It took us a while to find the right premises but it was worth the wait. We have views of the Covesea lighthouse, the RAF base and over Lossiemouth…very inspiring to say the least.
We have a 5kg roaster, hand built for us in Europe and it comes in at nearly half a ton in weight. Small batch roasting allows us full control of every roast we do. There is no switching a button to roast and walking away. Each batch is carefully monitored and logged using good old fashioned pen and paper, controlling gas, airflow and drum speed by hand, using our senses of hearing, sight and smell whilst following our own handcrafted roast profiles. Each coffee has its own specially crafted roast profile, that way we extract the best possible flavours and aromas from every batch.
Our 100% Arabica beans are sourced from ethically minded importers who recognise that sustainability is most important to allow the smallholder farmers to produce the best quality bean. By working closely with the farmers and their communities they help contribute towards a better future for generations to come.
We cup our coffees weekly, looking for continuity in the tasting notes and mouthfeel- this helps us maintain high quality in knowing that each bean is as good as the day it arrived into our roastery and that each bag leaves us with its own deliciousness.
As our company grows then so too will our coffee offerings but we feel it’s important to keep to our ethics of small batch and handcrafted and as we continue to learn (after all that’s what life is all about) we will share our growing knowledge and together we will make a damn fine brew!
